Challenges: Do not let the lemon grass to be over-boiled or cooked over a long period of time. By then, all its fragrance will be evaporate.
My brilliant idea: Prepare in advance by boiling lemon grass and store the lemon grass enriched solution in the refrigerator.
Ingredients: Lemon grass.
Procedure: (elementary process)
Step 1: Slice the lemon grass into thin slices.
Step 2: Add water. Boil it at medium temperature. Note: At higher temperature, you can smell the fragrance of lemon grass, meaning, it has been evaporated away.
Step 3: Test the pieces of lemon grass. If it does not give you any fragrance, stop boiling.
Step 4: Filter away the pieces of lemon grass.
1) The lemon grass solution is prepared in advance in order to prevent over-boiling in the later cooking process. It should be added to the gravy at the later part of the process. For example, boiled the mashed ginger first and then add in the lemon grass solution.
2) Adding sugar will make it into a nice lemon grass drink.
Remark: Lemon grass and the capsaicin begin to evaporate at medium temperature. Therefore, add these two in at the latest process stage. Merely, warm it for two to three minutes and the dish should be ready to be served.
Advanced method: Before boiling the lemon grass, add a teaspoon of cooking oil. The cooking oil will float on top and effectively prevents the fragrance of the lemon grass from evaporating off. However, you may have to pour away the top layer before you can get a clean solution of lemon grass.
