Mashed ginger (rendang)

Background: In traditional rending, chili and spices are often used. However, this gravy is not suitable for children and people who do not like spicy food. 

My brilliant idea: Use mashed ginger as a based stock for rendang.

Ingredients: Ginger and lengkuas (galangal).

Procedure: (Broken into two distinct sections)

Section one: Prepare the mashed ginger.

Step 1: Wash the ginger.

Step 2: Cut the ginger into fine slices.

Mashed ginger (rendang) - 行天之道 - 论老子

 Step 3: Mash the ginger slices into a fine mash.

Mashed ginger (rendang) - 行天之道 - 论老子

 Section two: Simmer the mashed ginger into a thick gravy

Step 1: Pour the mashed ginger into the frying pan.

Step 2: Add in two mashed slices of lengkuas (galangal).  

Mashed ginger (rendang) - 行天之道 - 论老子

 Step 3: Cover with its lid and boil the mixture for 5 minutes.

Step 4: Remove the lengkuas.

Finished product:

Mashed ginger (rendang) - 行天之道 - 论老子

Note: This is only a nicely prepared mashed ginger. It has to be cooked further to produce the intended gravy.

Assessment:

1) The lengkuas give it a nice aroma.

2) However, too much of lengkuas make it a little bitter.
