Banana, honey dates and medlar as a sweet-base stock

Background: Most people do not understand the benefits of combining the sweetness of several natural ingredients in one soup. Unlike the sweetness of, for examples, red or green bean soups, the sweetness is basically, ordinary cane sugar. If too much is used, it is too sweet. To some people who have a higher sensitivity of taste, they do find that the sweetness of cane sugar quickly turns into an unpalatable taste, meaning, they do not like the sweetness at all.      

Challenges: It is a sweet soup, after all. However, the challenge is to produce a combination of sweetness in one soup. This ensures it is not a case of too much sweetness of a single type which usually, is a put off.

My brilliant idea: There is a need to understand the time needed to boil different ingredients in order for its sweetness to be dissolved in the soup. Finally, combine them into one pot to produce the soup.          

Ingredients: Fully-ripe banana (500 grams), honey dates (4 pieces), medlar or 枸句子 (twenty pieces), 3 teaspoon of sugar and about the small volume of gula Melaka.  

Procedure: (Broken down into two sections)

Section one: Boil honey date and medlar.

Step 1: Wash the honey dates.

Step 2: Add in about 40 pieces of medlar.

Step 3: Fill up the pot with water.

Step 4: Boil until the honey dates has completely softened. Note: This should take 1 to 3 hours depending on your cooking equipment. A rice cooker may takes up to 3 hours.

 Section two: Continue to boil with banana

Step 1: Cut the banana into thickness of around 2-3 mm.

Step 2: Drop the cut banana into the pot.

Step 3: Add in a thumb-size piece of gula Melaka.

Step 4: Boil until the banana is fully softened. Note: The banana should be bland. It is no longer sweet anymore.

Finished Product:

 Note: It is essentially a concentrated sweet solution (after the dregs were filtered away).

Remarks:

1) This combination of sweetness from banana, honey dates, medlar and gula Melaka produced a sweet base-stock. (There are four different kind of sweetness in one soup).

2) It is a base stock for subsequent cooking of a meat-base soup, be it, beef, mutton or chicken.

3) It can be a base stock for vegetarian soup. It produces an enriched sweetness to an otherwise, quite bland vegetarian soup.

Assessment:

1) By itself, it is not suitable as a soup. It does not produce a strong aroma of flavor other than being sweet.

2) My intention is to use this base-stock to replace ordinary sugar.

Common applications:

1) Add two to three tablespoon of this base-stock to enhance the sweetness of your subsequent cooking.

2) It can be mixed with some other soup to make a totally different final soup.
