New creative way to cook rice noodle soup

       Background: Most of us have a habit to soak rice noodles to soften it first before cooking. During the soaking process, a lot of plain water is absorbed into the noodles. As a result, the rice noodles are largely bland while the soup may be delicious.  

My brilliant idea: Soak the rice noodle directly in the soup and not in plain water.  

Ingredients: Rice noodle, carrot and radish soup.

Procedure:

Step 1: Wash the rice noodles in running water.

Step 2: Soak the rice noodles in the carrot and radish soup. See Carrot and Radish soup.

 Step 3: Top up with plain water (same amount as the soup) because the rice noodles can absorb quite a lot of water. For this reason, rice noodle is more delicious than normal wheat-flour based noodles. 

Step 4: Add a quarter teaspoon of salt.

Step 5: Add a teaspoon of sugar to compensate for the amount of plain water added.

Step 6: Leave it for 15 minutes in order for the rice noodles to completely soften.

Step 7: Boil the mixture for 3 to 5 minutes.

Finished product:

 Remarks:

1) The rice noodle is light brown in color. The color is that of the carrot and radish soup.

2) The rice noodle has absorbed all the taste of the soup.

3) The soup may have almost completely dried up, however, the rice noodles is super delicious by it alone.

Applications:

This method can be applied to almost all kinds of soup, whether it is newly brewed or left-over soup.
