Standard assessment tests for chili sauce

Background: Most of us have a simple or rudimental understand of how to savor spiciness in food, especially, chili sauce. In their mind, spicy is a must quality and the more spicy, the better. Others who could not tolerate spiciness in food will avoid it altogether. 

Here are two common findings:    
1 ) If the chili sauce is not spicy, the preparation method is wrong.
2 ) If the chili sauce is very spicy and the very first bite gives you a choking experience like wasabi, your tongue is numb immediately. Thereafter, you are no longer able to savor the taste of any subsequent dish. This is one of the worst preparations of chili sauce. Its spiciness kills off your taste buds immediately.

My brilliant idea: Define the right approach to savor the spiciness in chili sauce.

The classic approach in savoring chili sauce:

Step 1) Scoop up a teaspoon (brim full is sufficient) of the chili sauce. Next, imagine the volume that is equivalent to one tenth of it.
Step 2) Prepare ten pieces of wonton (small little meat dumpling). Apply on top of the first piece of wonton a tenth of the chili sauce. Put it into your mouth and appreciate the smoothness and spiciness of the chili sauce. It must not give you a choking feeling.
Step 3) As described in (step 2), continue to eat the wontons, one piece at a time. When you are about to savor the seven or eight wonton, you should feel the spiciness of the chili sauce is getting into you, yet, it does not choke you like wasabi. At this juncture, the spiciness of the chili sauce should be most enjoyable to you, it is smooth and yet, quite spicy now.

Step 4) When you about to finish eating the ninth or tenth wonton, your tongue begins to find it a little too spicy for you. You need to stop eating and let your tongue takes a rest.  
Step 5) Assuming you are having a meal of wonton noodles, by the tenth wonton, you are finishing your whole bowl of noodles.  You stop eating now and yet, the spiciness of the chili sauce lingers in your tongue for a long time, giving you a continuous feeling of spiciness and yet, is smooth to your taste buds. This is the feeling of an absolutely best-in-class chili sauce.

Note 1: Be watchful of the first bite. The turnip and the natural sweetness of the chili sauce may give you a wrong conception that it is a sweet sauce.
Note 2: The spiciness kicks in only after two seconds. This is what is described as smooth. An initial smooth sweet taste followed by its spiciness.
Note 3: Continue applying the chili sauce as a spread (like butter spread) to the turnips. see how many bites of the turnips you can enjoy till full satisfaction. 

 

Warning: 

Today's chili sauces sold in the supermarkets are fully laden with two things: chemical replacement that mimics the spiciness of natural chilies; and surfactants, that make the chili sauce looks homogeneous throughout, giving a nice visual appeal that is useless to our taste buds.

1) Cloaked under the name of industrialization of the kitchen, chemical replacements for almost all kind of natural food were produced and enter into most franchise stores. Please stop buying any food, especially drinks from any franchise food outlets. In the name of profit-maximization, your health is sacrificed. Next time when you visit a franchise food outlet, take a good look at their tomato or chili sauce and their drinks. Do they look like the dish washer liquid found in your kitchen?   

2) Surfactants are compounds that lower the surface tension (or interfacial tension) between two liquids or between a liquid and a solid. Surfactants will diffuse in water and adsorb at interfaces between air and water or at the interface between oil and water, in the case where water is mixed with oil. World production of surfactants is estimated at 15 Million ton per year, of which about half are soaps. The other half goes into bottle drinks and food.
