Sweet sauce

Background:

At the request of a friend who sells crispy popiah to make sweet sauce, I went on to create a new breed of sweet sauce using pumpkin as the base stock instead of red bean.

Challenges: The sweet sauce of old memories is made from red bean paste. It is finely ground, sweet and comes with the aroma of fermented soy bean. Boiling red bean into a fine paste takes hours. In the process, if you are not careful, lacking in stirring, the bean paste at the bottom of the pan may be burnt. This spoils the whole pot of sweet sauce.

My brilliant idea: Use pumpkin paste to replace red bean paste instead. In addition, the sweetness pumpkin is loved by almost everyone.       

Ingredients: Pumpkin (1 kg), sugar (200 grams, add more if you like it sweeter), gula Melaka (100 gram), twenty pieces of medlar or 枸句子, fermented soy bean (4 tablespoons) and one piece of dried plum.

 Procedure: (Broken down into four main sections)

Section one: Steam the pumpkin

Step 1: Please refer to procedure, Steam pumpkin paste at

Remarks:

1) The steamed pumpkin paste is very easy to work on. 

Section two: Scrape the steamed pumpkin into a fine paste

Step 1:  Scrape the pumpkin against a fine filter using a spoon. Note: I have a blender. However, I am using this rudimental method for demonstration purpose.

 Remark:

1) Took me an hour to run the pumpkin through the fine filter. I did it while watching a Korean love drama. The idea is always do multi-tasking. Otherwise, you will give yourself an excuse, cooking is time-consuming. 

Section three: Add soften fermented soy bean

Step 1) Scrape the fermented soy bean against a fine filter using a spoon.

 Remark:

1) The fermented soy bean is much harder than the steamed pumpkin.

2) Steam the fermented soy bean together with the pumpkin is one good way to soften it.

3) The final mixture looks like this. See below.

 Section 4: Boil with sugar, medlar and dried plum

Step 1) Pour into the cooking pot 500 ml of water.

Step 2) Pour in the fine pumpkin paste from Section 3.

Step 3) Add a teaspoon of salt. Note: Salt is required in order to enhance the sweetness of the sauce.

Step 4) Add in 100 gram of gula Melaka, twenty pieces of medlar and one piece of dried plum. 

Step 5) Add in 200 gram of ordinary cane sugar. Note: Add more sugar if you want it sweeter.

Step 6: Use low heat and stir frequently until you get a thickened sauce, of the right concentration that suits your application.

 Remarks:

Gravy basically is water thickened with sugar as the primary ingredients. Other ingredients added will give the gravy a variety of tastes. I leave it to your imagination to enhance the sweet sauce to your likings.

Step 3) Add a teaspoon of salt. Note: Salt is required in order to enhance the sweetness of the sauce.

Step 4) Add in 100 gram of gula Melaka and twenty pieces of medlar.

Step 5) Add in 200 gram of ordinary cane sugar. Note: Add more sugar if you want it sweeter.

Remarks:

Its pumpkin sweetness is one plus point. The sweetness of cane sugar is secondary. Moreover, there are two other added sweetness of coconut sugar (gula Melaka) and medlar. The aroma of fermented soy bean is a plus point, too. Its (very) mild saltiness enhances the sweetness of the pumpkin, cane sugar, gula Melaka and medlar.    

Assessment:

It really makes you wonder why you should be using MSG or Ajinomoto when a simple procedure like this gives you an excellent, sweet sauce.  

Common applications:

This procedure teaches you the fundamental steps of making gravy. As you go on the learning curve, you shall be able to make a whole range of wonderful and delicious gravy.

Remarks:

1) This sweet sauce is many times more delicious than the usual black sauce fried beehun.

2)Likewise, the mee mixed with sweet sauce is as delicious as the beehun above.

3) This is the classic application of sweet sauce that puts oyster sauce (basically MSG or Ajinomoto) pales in comparison. You will never buy oyster sauce any more. Note: Cabbage is essentially a tasteless vegetable, to cook it well with a rich aroma of garlic, onion and dry prawn and yet, comes with four different kinds of sweetness in one, it is a must try. Then you can apply the same to all other stir-fried vegetables.
