Secrets of a delicious plate of vegetable

Background: Oyster sauce came in as a storm and make boiled or stir-fried vegetables tasty. However, how many of you realized that the oyster sauce that you purchased from the supermarket is essentially MSG or Ajinomoto? This is the driving force behind my adventure to create a new breed sweet sauce using pumpkin as the base stock.

Challenges: The sweetness from one source, for example, table sugar made from cane sugar alone will make the sweetness rather bland. This is the case when you just add a teaspoon of sugar during cooking.

My brilliant idea: Therefore, I went ahead to create a combination of sweetness in one sauce. They are: pumpkin sweetness, cane sugar from table sugar, gula Melaka (or coconut sugar) and medlar. In addition, I added in a piece of dried plum to give a very mild sourness. Finally, I added the aroma of fermented soy bean into this sweet sauce.

Ingredients: Cabbage (a vegetable with rather mild sweetness), a big bulb of garlic and four pieces of onion, dried prawn powder (See http://ericwoonct.blog.163.com/blog/static/181911362201441222413637/) and sweet sauce (See http://ericwoonct.blog.163.com/blog/static/18191136220146204345750/ )

 Procedure: (Broken down into three main sections)

Section one: Stir-fried garlic, onion and dried prawn powder

Step 1:  Minced some garlic and onions.

Step 2: Stir-fried in oil well above and covering all the minced garlic and onions.

 Step 3: Observe carefully the color of the garlic. When it turns light brown, switch off the power.

 Step 4: Add in a table spoon of dried prawn powder.

Step 5: Do not switch on the power. The heat from the heated oiled is sufficient to stir-fry the dry prawn powder to give it a strong aroma.

Step 6: Pour all the contents into a glass bottle. This can be use for multiple dishes later on.

Remark:

1) Using dried prawn powder save time (no need to heat it up) and requires only 1/5 the amount of dry prawn that is not in powder form.

Section two: Boil the cabbage

Step 1: Wash and tear by hand the cabbage into small pieces.

Step 2: add in some water and boil it.

Step 3: When cooked, pour away the excess water.

Remarks:

1) The cabbage is tasteless, especially after boiling. Leave behind a little water to make into gravy.

Section three: Add GOP and sweet sauce

Step 1) Add in one table spoon of the GOP from section one.

Step 2: Add in a table spoon of the sweet sauce.

 Step 3: Mix thoroughly.

Remark:

1) Boiling the vegetable is simple but tasteless.

2) Adding in GOP and sweet sauce gives it the final taste.

Remarks:

1) You can see the dark brown color stuff is stir-fried minced onion, a piece of medlar.

2) The cabbage is a very light yellowish, color of pumpkin from the sweet sauce.  

Assessment:

1) It really makes you wonder how on Earth a simple dish of cabbages that gives out a strong aroma of garlic, onion and dried prawn, yet at the same time, a sweetness that is wonderful, all because it is a combination of four different kinds of sweetness, plus the mild sweetness of cabbage.

2) This is the classic application of sweet sauce that puts oyster sauce (basically MSG or Ajinomoto) pales in comparison. You will never buy oyster sauce any more. Note: Cabbage is essentially a tasteless vegetable, to cook it well with a rich aroma of garlic, onion and dry prawn and yet, comes with four different kinds of sweetness in one. It is a must try. Then you can apply the same to all other stir-fried vegetables.

Common applications:

This procedure can be applied to cook all kinds of vegetable whether it is boiled or stir-fried. It is a simple combination of GOP and sweet sauce that is so easy to make into delicious gravy.
