Steamed lady finger

Background:

Few people realized it is not easy to cook a delicious dish of vegetables. Why? Most vegetables are leafy and thus, does not contain a fair amount of sugar which our tongue loves most, sweetness.       

Challenges: No matter what, first, the vegetable must be cooked in order to remove the smell of chlorophyll or smell of green leaves. Second, introduce sugar to give us a sweet taste. Of course, you can add in other taste depending on the final dish. In this example, lady finger is used for demonstration because it is rather bland and tasteless.

My brilliant idea: Always split the cooking of any dish into two distinct parts. One, steam or stir-fry the vegetables. Two, whip up a sauce that goes with the vegetable. Then, mix the two together and voila,  you get the final product.       

Ingredients: Lady fingers, Rose onions or shallots (3 pieces) and a quarter teaspoon of roasted dry prawn powder (see http://ericwoonct.blog.163.com/blog/static/181911362201441222413637/).  

 Procedure: (Broken down into four main sections)

Section one: Steam the lady fingers

Step 1: Wash and rinse the lady fingers.

Step 2: Steam the lady finger.

Remarks:

1) The steam method keeps the natural taste of most vegetables.

2) Steam too long only means it is softer. That’s about all.

Section two: Stir fry the onions/shallots

Step 1:  Minced three pieces of onions.

 Step 2: Add 10 ml of cooking oil into the frying pan and add a little salt.

Step 3: Stir-fry the onions until it turns light brown in color.

Step 4: Add a quarter teaspoon of roasted dry prawn powder.

Step 5: Continue to stir-fry for a minute.  

Remark:

1) Salt is a very good form of catalyst for food preparation or cooking.

2) Saltiness is also the first element that strikes our tongue. After giving us a salty taste, the sweetness that strikes our tongue a little later usually turns out much more sweeter than a drink of sugar-laced drink. This is how salt enhances the sweetness of most dishes.

 3) Why use roasted dry prawn powder? First, it takes only one minute to fry it to a good strong aroma. Whole pieces dry prawns need to be stir-fried for at least ten minutes until low heat. High heat means the smell of the caramel derived from the sugar in the dry prawn have evaporated away. Second, a fifth by weight of the roasted dry prawn powder is required compared to whole piece dry prawns. It is pure economics, in both waste reduction and cooking time required.

Section three: Prepare the gravy

Step 1) Turn the switch button to the off position. Add into the frying pan 30 ml of water.

Step 2) Add half a teaspoon of sugar.

Step 3) Switch on to continue frying the mixture until you get a nice concentration of the gravy.

 Remark:

1) Since the lid is not place on top of the frying pan, the water can evaporate off pretty fast. Note: Often the lid is removed into to let the excessive water evaporates off.   

Section four: Mix the two gravy and vegetable together

Step 1) Place the steamed lady fingers neatly onto a plate.

Step 2) Pour the gravy on top of the lady fingers.

Remarks:

1) Lady finger is slimy. The steam method preserves its sliminess to its maximum. However, it is rather bland and tasteless.

2) Gravy basically is water thickened with sugar as the primary ingredients. Other ingredients added will give the gravy various tastes.

Finished product:

Remarks:

1) The lady finger is very slimy.

2) The gravy is rather delicious with a strong aroma of onions and dry prawns, and sweet because of the sugar added.

3) I poured all the rest of the gravy over warm rice and the rice tastes really delicious.   

Assessment:

It really makes you wonder why you should be using MSG or Ajinomoto when a simple procedure like this gives you an excellent, delicious dish.

Common applications:

This procedure teaches you the fundamental steps of making gravy. As you go on the learning curve, you shall be able to make a whole range of wonderful and delicious gravy.
