Mix cililabu with GOP to produce sauce for yam cake and etc

Background:

I have no faith in all off-the-shelf packaged chili sauce. These are all chemical or artificial flavorings that could not match the natural flavors of the sauces of the olden days. Worst, they are harmful to our body. Cloaked under motive of profit-maximization, consumers’ health is sacrificed.   

My brilliant idea: By breaking down the two distinct processes of making gravy into two parts: one, advance preparation of the oil-based rich fragrance of stir-fried minced garlic, onion and dry prawns; two, advance preparation of the water-base production of combination of four common tastes namely, mild saltiness, sweetness, sourness and spicy hot from capsaicin. In the final cooking of a dish, these two advance preparations are combined together with the main dish, fragrance enriched GOP and 4-taste enriched cililabu.

My aim: Demonstrate the making of all kinds of gravy suitable for a wide variety of home-cook food.       

My new found cooking procedure: Just add a tablespoon or two of this cililabu base stock to any vegetable dish or noodles that you are cooking after you have stir-fried minced garlic and onion into a nice light brown color or together in combination of GOP base stock. See GOP base-stock (roasted Garlic, Onion and dry Prawn) . Continue to use low heat and stir thoroughly to mix these mixtures well into forming the wanted gravy. Btw, you are free to add in other ingredient(s) of your choice to make it into a much fully and more appropriate gravy for whatever dish that you are cooking.       

Ingredients: GOP (half a teaspoon) and cililabu (one tablespoon).

 Procedure:

Step 1: Mix a teaspoon of GOP with a tablespoon of cililabu.

Step 2: Use low heat (about 60 degrees Celsius) to heat up the mixture.

Note 1: Add a little water if you want it to flow better.

Note 2: It need not boil because both sauces have been properly cooked.

Note 3: It takes you 3 minutes to prepare this sauce.

Finished product:

Remarks:

1) Bright orange color makes it so much more appealing visually.

2) Give you a combination of 4 main tastes: mild saltiness, sweetness, sourness and spicy and the fragrance of a combination of stir-fried garlic, onion and dry prawns.

3) Squeeze in a little lime if you want to increase its sourness.  Note: The author does not like it sour, hence, he added only 50 grams of tamarind paste. See full procedure in Cililabu – a most versatile base stock for all gravy .
