Steamed potatoes salads

        Background:

I have no faith in all off-the-shelf packaged food, including mashed potatoes. I cannot imagine the gravy for most franchised mashed potatoes is to made from recycled unwanted stock as a result of the mad pursuit of profit-maximization to the expense of the consumers’ health.    

My brilliant idea: By breaking down the two distinct processes of making gravy into two parts: one, advance preparation of the oil-based rich fragrance of stir-fried minced garlic, onion and dry prawns; two, advance preparation of the water-base production of combination of four common tastes namely, mild saltiness, sweetness, sourness and spicy hot from capsaicin. In the final cooking of a dish, these two advance preparations are combined together with the main dish, fragrance enriched GOP and 4-taste enriched cililabu.

My aim: Demonstrate the making of all kinds of gravy suitable for a wide variety of home-cook food.       

My new found cooking procedure: Just add a tablespoon or two of this cililabu base stock to any vegetable dish or noodles that you are cooking after you have stir-fried minced garlic and onion into a nice light brown color or together in combination of GOP base stock. See GOP base-stock (roasted Garlic, Onion and dry Prawn) . Continue to use low heat and stir thoroughly to mix these mixtures well into forming the wanted gravy. Btw, you are free to add in other ingredient(s) of your choice to make it into a much fully and more appropriate gravy for whatever dish that you are cooking.       

Ingredients: Potatoes, GOP and cililabu.

Procedure:

Step 1: Peel the potatoes.

Step 2: Cut the potatoes into small cubes.

Step 3: Steam the cut potatoes. Note: sprinkle some salt.

       Step 4: When the potatoes are about 70% cooked, add in the carrots and the gravy mixture (half a teaspoon of GOP and two tablespoons of cililabu)

Step 5: Cut a green paprika into little cubes. Add one to two pieces of limau kasturi.

 Remarks:

1) Steamed potatoes produce a nice fragrance of the oil that oozed out from the potatoes.

2) The oil produced from the potatoes goes very well with the GOP and cililabu. Meaning, there is no need to add a single drop of cooking oil.

       3) Simple to cook and yet, it maintains the true fragrance and taste of the potatoes, certainly much more delicious than boiled or mashed potatoes. In other words, to savor what potatoes taste like, steam it. Then spice it up with your own cooked gravy. GOP and cililabu is a perfect blend of gravy.

       4) Use this recipe to make fillings for curry puff. It is many times more delicious than the ordinary potatoes boiled with curry spices.
