Steam yam cake (with pumpkin paste)

Background: It is very easy to steam yam cake.

My idea: Steam yam cake with mash pumpkin paste (stocked up in my refrigerator in advance).

Aim: To develop a simple recipe to steam yam and pumpkin together to give a delicious breakfast or tea snack.

Ingredients: Yam cake (250 grams), mash pumpkin paste (from 250 gram raw), corn flour (250 grams), dry prawns (50 grams).

Steam yam cake (with pumpkin paste) - 行天之道 - 论老子

 Procedure:

Step 1: Cut away the skin of the yam.

Step 2: Cut the yam into small dices and place them into a salad bowl.

Step 3: Add in the corn flour and dry prawns.

Step 4: Add in mash pumpkin paste. See Steam pumpkin paste.

 Step 5: Add a teaspoonful of salt. Mix thoroughly. Note: No need to add water because the mash pumpkin is wet. Try not to add water.

Step 6: Pour the mixture into a plate and place it on top of a stand that raise it up away from the bottom of the cooking pan where which a bowl of water had been added.

 Step 7: Cover up the cooking pan with its lid and switch on to boil the water. The boiled water will generate steam that cooks the yam cake. Steam it for 20 minutes.

Step 8: Stir fry some onions with minimum of cooking oil. When the onions had turned light brown in color, it is ready to be added to the yam cake.

Notes:

1) The color of the pumpkin is bright yellow in color. It increases the appetite of a child. Commercially produced yam cake with pumpkin is light yellow in color for obvious lower cost where double or more corn flour is added.

2) After adding on the fried onion and its frying oil content, it goes very well with chili or sweet or tomato paste.

Assessment:

1) The sweetness of the pumpkin is natural and delicious.

2) Commercially produced yam cake is quite bland (not sweet at all) because of the much higher proportion of corn flour added.
