Steamed pumpkin paste (base stock)

       Background: It is very easy to steam pumpkin and mash it into paste form.

Challenges: Mash pumpkin in advance. Use it as a base-stock to make all kinds of cake, gravy and soup. Note: This idea is actually build on past successes in using fully ripe banana to make gravy and soup.

My brilliant idea: To develop a simple recipe to steam pumpkin and mash it into a paste form, keep it in the refrigerator and later, use it as a base stock.

Ingredients: Pumpkin (1 kilogram for demonstration only).

Procedure:

Step 1: Wash and cut away the hard skin of the pumpkin.  Note: Remove all the green part because it smells of chlorophyll.

Step 2: Slice the pumpkin into small slices.

Step 3: Add about two bowl of water into the cooking pan.

Step 4: Put the above sliced pumpkin into flat-base metal plate and place it in the cooking pan.

Step 5: Cover up with its lid and switch on to boil the water. The boiling water will generate steam that cooks the pumpkin until it had turned soft.

 Step 6: Scrape the pumpkin against a fine filter using a spoon. Note: I have a blender. However, I am using this rudimental method for demonstration purpose.

Applications:

1) The color of the pumpkin is bright yellow in color. It increases the appetite of a child.

2) Whenever you want to whipped up a gravy for fish or steak or just any meat that forms the main ingredient, you can always use it as a paste to give a sweet and thickened gravy (depending on your dish). 

3) It is a very good base stock for making soup, say, adding cream, mushroom, carrots. Can easily whip up a very good soup for noodles. 

4) It is also good base stock for making dry noodles (Malaysian style of 干捞面 or ganlaomian) with the addition of fried garlics, onions and dry prawn powder. 

Assessment:

1) The sweetness of the pumpkin is natural and delicious.

2) The addition of a little salt brings out the sweetness of the pumpkin as it is in all cooking.
