Fish cake

Background: Most chefs are very particular about choosing the right fish for the right type of cooking. There is one type of fish, leather jacket fish which is absolutely bland in taste, henceforth, it is the cheapest. One of its common forms of marketing is to slice it into fish fillets and freeze it.

My idea: Make use of the fish fillet made from leather jacket fish and turn it into fish cake – smashed it into a paste and steam it. 

Normally, fish cake is made from a special type of fish, called ikan parang or smooth wolf herring. In Singapore, this fish is rather expensive, fetching more than US$20 per kilogram. See picture below.

Ingredients:

Leather jacket fish fillets (one kilogram), fully ripe banana (half a kilogram), two table-spoonful of tapioca flour.

      Procedure: (Learned the Palembang/Bangka style of making fish dough and Pempek)

1)         Use a pestle and mortar to pound the fish fillet thoroughly.

2)            Add in two cupful of Hua Diao Jiu (Chinese cooking wine). Mix well and leave it aside. Purpose: To remove the fishy smell.

3)            Peel all the bananas and drop them into a large salad bowl.

4)            Use a knife and cut up the banana into fine pieces.

 5)            Use an egg-beater to whip the banana into a fine paste.

6)            Pour the pounded fish fillet into the salad bowl.

7)            Add in two table-spoon full of tapioca flour. Note: To give the fish paste a strong texture, especially, when making it into fish balls. 

8)            Add in two teaspoonful of salt. Note: This fish is rather bland. Depending on your requirements, you may add less salt.

9)            Use an egg-beater to whip the mixture thoroughly.

10)            Pout the mixture into a plate.

11)          Pour a bowl of water into the frying pan.

12)          Pour half a cupful of Hua Diao Jiu to the bottom of the frying pan.

13)          Place the plate of fish-and-banana paste into the frying pan.

 14)          Begin with low heat for about twenty minutes. Purpose: Let the Hua Diao Jiu evaporate and it is its vapor form that is most effective in removing the fishy smell.

15)          Switch to medium heat to generate steam to cook it.

16)            Sample the fish cake and make sure it is properly cooked.

 Applications:

Here are three ways to make full use of the fish cake.

1)            The fish cake is a little salty (salt added) and sweet (sweetness of banana). It is delicious and can be eaten as a main dish. It goes extremely well with both porridge and plain rice.

2)            Cut it up into smaller chunk and store in the freezer department of a refrigerator. In my first trial, I cut it into 12 pieces (2 cm by 4 cm by 1.5 cm thick), which means, I can enjoy it over 12 meals.

3)            The fish cake can be used as a main ingredient to make soup. Cut up a small piece of the fish cake (2 cm by 4 cm by 1.5 cm thick) and add it into the soup. Cook the soup from room temperature using medium heat. Fifteen to twenty minutes later, the soup is ready.

Remark 1:       In the next trial, I shall add some of my XO chili paste to give it a combine taste of saltiness, sweetness and spiciness. In addition, someone who loves it a little sour may add a few drops of lime or limau kasturi.  In simple words, this is a wonderful dish that gives you flexibility to add several different tastes to an initially bland fish.

Remark 2: Compare this procedure with the making of fish ball which uses the much more expensive types of fish such as ikan parang or wolf herring or ikan batang or large mackerel.
