How to make crunchy green chili

        Background: Malaysian and Singaporeans used to love eating wonton noodles. One of the reasons is the supplementary small dish of crunchy and refreshingly hot green chili. Nowadays, few wonton noodle hawkers make their own green chili and thegreen chili offered now has changed from good to worse. First, after opening a bottle of green chili and if it has been left unfinished within two days, the remaining green chili had turned yellowish, softened (no longer crunchy) and sour in taste. It can be said, few hawkers cares to provide fresh and crunchy green chili anymore. Second, most green chili available in the market are now factory-made. May I ask you, “Do you believe that these manufacturers do not put some chemicals to reduce the cost of raw materials? This is the results of food scientists who developed all kinds of chemicals that mimic the flavor of nature food. Why? These food scientists are paid to reduce cost of the ingredients used in order to help the boss to maximize profits, at the expense of you and me, the consumers.

Ingredients: Plum paste, fresh red or green chili, chili padi, ripe limau kasturi (only found in Malaysia and some part of Indonesia, say Sulawesi and Kalimantan).

1) Cut up the chili. Note: The small chilies are very hot. You can leave it out, if you do not like it hot.

2) Add half a teaspoon of the Plum paste and add some salt. both salt and sugar in the Plum paste helps to draw out the water content in the chili, hence, makes them crunchy. Note: Sprinkle 1/2 teaspoon of sugar if you do not like to use Plum paste.

3) Mix it well with a spoon.

4)Cover up the bowl. Note: Prevent insects from landing into the bowl.

5)Two hours later, you squeeze the limau kasturi into the mixture. Mix it well. Note: You can do without limau kasturi altogether or replace it with a quarter piece of lemon. 

6)It is immediately ready for serving.

Remark 1:The amount of limau kasturi or lemon used is totally dependent on you, whether you like it more sour or not.

Remark 2:The above preparation of green chili can be used to prepare a dish that Maozedong loves to eat, that is, steamed fish with lots of green chili. See picture below.

The above preparation of green chili can be used to replace the original taste, “laobing or老兵” brand of canned green chili. Other than the dish turns out to be of different taste (mainly because the use of different green chili, of course), it is better to prepare your own green chili for two obvious reasons. One, personally, I seriously doubt the factory-produced canned green chili was not added with several chemicals such as preservatives and other chemical flavoring to enhances its taste. The adding of chemical flavors or additives into our food chain is the main reason why I begin to experiments with cooking to ensure all of you consume chemical additives free food. Two, who will consume the whole canned or bottle of green chili in one cooking? Once a bottle is opened, the remaining green chili will turn soft, sour and deteriorate in taste pretty fast.

      Remark 3: There is no need toad so much red chili. The restaurant wants you t feel good seeing so much red chili. anyway, the cost of red chili has been factored into the price of your dish. At home, you can use much less chili if you want it less hot or less waste of thrown away chili after your meal.
