This is a very simple way to cook all kind of fresh vegetables the Chinese way. This is meant to be shared with all non-Chinese friends. Sadly, most Chinese do not even know this formula.

1) Soak vege for two persons in common salt water to effectively remove all residual pesticide.

 1a) your kitchen must have a pail for you to soak vege with salt in order to remove the residual pesticide.
2) Minced garlic, (small onion, if you like) and crushed half an aniseed (八角). Note: This is the secret to a nice aroma. Add less if you don't like it to be strong, or vice versa.

 2a) A knife for peeling apple is a good guide for the size of the aniseed. 
3) Stir fry the above with oil and a sprinkle of salt added in right before you heat the mixture.

 3a) It seems I had added too much oil. No. I am going to add in onion to produce a sweet gravy instead of adding sugar in step 6.

 3b) The credit card gives you a good idea how big the onion is.
4) When the aroma of the oil mixture turns on nice, pour out the nicely fried aromatic mixture into a bowl. Shortly before this, you should have added some water to absorb the sweetness of the onion and with watery gravy, it envelopes the vegetables better to give every pieces of vegetable leaves a sweet taste.

 5) Without washing the wok, add in the vege. Cover up the wok immediately.

6) Add water in a bowl and dissolve cane sugar in it. (amount depends on individual) .Note: Skip this step if you are using onion to give it a sweet taste.
7) When the vege begins to soften, pour in the dissolved sugar or the nicely fried aromatic mixture in step 4.

8) Stir fry the vege to make sure all the vege has a good bath of the aromatic mixture.
9) Keep the lid on for another 2 to 3 minutes. Note 1: Skip this step if you want it crunchy, or meal time could be an hour or two later. Note 2: You can stir fry it again in about 2 minutes to warm it up before you serve it on the dining table.   
10) Very Impt: Before you scoop up the cooked vege from the wok, sprinkle some light soya sauce. Note: This is the secret of using light soya sauce that brings out the sweet taste of whatever you cook.

1) Why do I begin to learn to cook at 53 years old? I cannot stand the current pool of chef any longer because they are all "MSG" (full name, ajinomoto) chefs. Every time without fail, an hour after eating any dish cooked with MSG, I feel very sleepy and drowsy.
