Brand new rojak sauce

       Background: Malaysian, Singaporeans and Indonesians loves rojak (fruit salad).

Ingredients: two chili padi, coconut sugar (gula Melaka or gula Jawa) or palm sugar (gula nipah) at four times the volume of the chili padi used, half a Del Monte banana or a full Pisang Mas, roasted and pounded peanut, a little salt and a drop of boiled water (Fluoride removed during the boiling process).

1)Wash the chilli padi and then wipe it dry with a piece of dry towel.

 2)Mop the chopping board dry.

3)Cut the chili padi into thin slices. Important lesson: Do not remove the seeds. Cup the chili padi whole. The seeds give a much stronger hotness.

4)Slice the gula Melaka into thin slices. Note: The chopping board is dry.

 5) Pour the mixture of cut chili padi and sliced gula Melaka into a bowl. Add a little salt and a drop of boiled water and mix thoroughly. Important lesson: The sugar in the gula Melaka extracts out the essence of the chili padi. In modern scientific explanation, this method makes use of the osmosis process to extract the essence of the chili padi.

6)Cover it up and avoid insects falling into the bowl and leave it aside for half an hour. Key point: The above six steps is the standard procedure to prepare chili padi.

7)Add less than half a teaspoon of soy sauce and half a ripe Del Monte (small size) banana and mix them thoroughly. Note: The Malaysian version Pisang Mas is a better option because it is sweeter. Important highlights: This is a new found approach to evenly distribute the hotness of the chili padi over a much larger volume of gravy. Personally, I am a chili padi enthusiast and love hot chili padi, yet I cannot withstand the hotness of the gravy extracted using this Osmosis method. Finally, I got the ratio of the ingredient right and the introduction of banana is a most wonderful medium to mild down the hotness of chili padi.

 Remark 1:The traditional way of making rojak sauce is heavy on black sauce, sugar and salt. However, the taste may not turn fantastic should the ratio of ingredients go wrong. The author switched over to use gula Melaka and banana as the two key ingredients.

Remark 2:Leave it over night to allow the osmosis process to take its full effect in melting away the banana. It is very smooth to your taste buds and at the same time, the chili hotness is evenly distributed by the banana.
