How to cook banana fried rice

       Background: Often, we have left over rice from the last meal. The best option is to fry the rice. After watching "Top Chef" program where chef Liu Yifan demonstrates how to fry rice that is enveloped in golden yellow color, I wanted to try it myself. However, I will focus on using chili padi as my main ingredient for the sauce. In a way, I am proud of a new found method in which I had tried several times to obtain the best way to extract the maximum hotness out of the chili padi. Subsequent to that, I also found a new method to effectively even out the hotness of the chili padi with banana.  

Ingredients: Two chili padi, coconut sugar (gula Melaka or gula Jawa) or palm sugar (gula nipah) at twice the volume of the chili padi used, two eggs, less than a quarter teaspoon of sour paste (to make it easier to mix the ingredients), half a small-size Del Monte banana, twenty roasted peanuts.

 1)Wash the chilli padi and then wipe it dry with a piece of dry towel.

2)Mop the chopping board dry.

3)Cut the chili padi into thin slices. Important lesson: Do not remove the seeds. Cup the chili padi whole. The seeds give a much stronger hotness.

4)Slice the gula Melaka into thin slices. Note: The chopping board is dry.

5) Pour the mixture of cut chili padi and sliced gula Melaka into a bowl. Add a little salt and less than a quarter teaspoon of sour paste and mix thoroughly. Important lesson: The sugar in the sour paste and gula Melaka extracts out the essence of the chili padi. In modern scientific explanation, this method makes use of the osmosis process to extract the essence of the chili padi.

 6)Cover it up and avoid insects falling into the bowl and leave it aside for half an hour. Key point: The above six steps is the standard procedure to prepare chili padi.

7)Add less than half a teaspoon of soy sauce and half a (must be fully) ripe Del Monte (small size) banana and mix them thoroughly. Note: The Malaysian version Pisang Mas is a better option because it is sweeter. Important highlights: This is a new found approach to evenly distribute the hotness of the chili padi over a much larger volume of gravy. Personally, I am a chili padi enthusiast and love hot chili padi, yet I cannot withstand the hotness of the gravy extracted using this Osmosis method. Finally, I got the ratio of the ingredient right and the introduction of banana is a most wonderful medium to mild down the hotness of chili padi.

8)Scoop the left over cold rice into a big bowl and pour the above mixture and mix thoroughly. Aim: Every single piece of rice should be enveloped by the sauce.

9)Pour two egg yoke into the bowl. Continue to mix thoroughly. Aim: every single piece of rice should be enveloped by a thin layer of egg yoke.

10)Switch on the frying pan to high heat. Add a small drop of cooking oil to thinly cover the frying pan. Aim: to prevent the rice from sticking to the frying pan.

11)Switch the frying pan to medium heat. Continuously stir fry the rice to ensure the rice is slowly cooked.

12)Remove the cooked rice into a bowl. Add in the roasted peanuts. Note: If you were to mix the roasted peanuts in the fried rice much earlier, the moisture in the rice will soften the peanuts and its strong aroma and crunchy is all gone.

 Comment 1:Can you imagine it? Each pieces of the fried rice has a wonderful taste of: very mild spicy hotness, sweetness of banana, mild aroma of banana and strong aroma of roasted peanuts. The rice itself is soft.  The rice simply melts in your mouth. This is truly excellence in cooking and unmatched combination of ingredients to make such a wonder multi-flavored sauce.
       Comment 2: Both the steps of mixing the ingredient thoroughly is done outside in a big bowl without heat. Since it is mixed in a not heated bowl, the quality control is simply, superb.

Comment 3: The use of very little vegetable oil (merely to wipe the bottom of the frying pan). The content of the banana is 20% fat. Yet, with medium stir fry method, the fat does not ooze out of the banana. This can be said, mastery in cooking.
