A new found way to bake fish

        Note: Not all kind of fish can be baked, especially if it has lots of oil usually around the bone leading to its dorsal (top) and anal (bottom) fins. Fish with lots of oils should be oil-fried at low heat.

Demonstration:

1) Clean the fish. The use of a cutter (shown below) makes trimming the fins neat and easy.

2)Wipe off the excess water from the surface of the fish with a piece of dry cloth.

3)Place six pieces of wooden chop sticks on the floor of the frying pan. The aim is to create a gap in between the fish and the frying pan and avoid the fish being in direct with the hot frying pan, hence, eliminating any chance of charring the fish. Both sides of the fish can be baked evenly.

4)Place the fish on top of the chop sticks. Add a teaspoon of Huadiaojiu (two teaspoon if the fish is large or of the smelly type).The gap allows the Huadiaojiu to reach the bottom of the fish easily.

 5)Put the lid on. Switch on to low heat.

6)Below is a sample of a baked fish. Note: The skin of this type of fish is very thin and delicate. Yet, other than the tail portion where the fish is in direct contact with the frying pan, the skin on the rest of the fish is fully intact.

7)Add some thinly sliced red chili. It looks much more pleasing.

Remark 1:The fish oil that dripped onto the base of the frying pan must be thrown away. The fish oil of most type of fishes is awful in taste. How many of you can take cod liver oil?

Remark 2: You must be able to pick fishes that do not have much oil at around its dorsal of anal fins.

Remark 3: As for the sauce, I leave it to you because it is your taste buds that matter.

1) Why do I begin to learn to cook at 53 years old? I cannot stand the current pool of chef any longer because they are all "MSG" (full name, ajinomoto) chefs. Every time without fail, an hour after eating any dish cooked with MSG, I feel very sleepy and drowsy.
2) As long as a mother can cook good dishes, her children will never forget her kindness (mother's love).
3) Please forward it to all the mother or anyone who aspire to cook one day (why not, now).
4) Good delicious food enhances the intimate relationship between a couple (mother and child) more than anything else.
